Deixe marinando durante 2 horas, no m\u00ednimo. Limpe cada coxa de todo tempero. Aque\u00e7a a gordura at\u00e9 atingir 80\u00baC, abaixe o fogo para o m\u00ednimo poss\u00edvel e adicione as coxas. Deixe cozinhar por 2 horas e meia. Transfira as coxas para um pote (preferencialmente de vidro) e cubra-as com a gordura do cozimento. Guarde na geladeira pelo maior tempo poss\u00edvel.
